Escovitch Fish
Typically featuring red snapper, Jamaican escovitch fish is seasoned with a vinegar-based marinade and dressed with colorful bell peppers and onions. Escovitch fish is usually made spicy with the addition of scotch bonnet peppers, but I prefer it without the heat. (Not a fan of spicy food.)
Really tasty dish, but warning: this fish is served with the head still on, don’t be alarmed!
